Red wine pasta with pancetta & mushrooms 🍷

This is absolutely not authentic Italian cuisine so please don’t call the police or Stanley Tucci

Method 👩‍🍳
1. In a pan over medium heat, sweat the onions and garlic until soft and translucent
2. Add the diced carrots, pancetta and mushrooms to the pan and sauté for 5 minutes until the pancetta starts to crisp up
3. Add the tomato purée and mix well
4. Turn the heat up and add the red wine to deglaze the pan
5. Let the mixture bubble away at a high heat to cook off the alcohol (5-7 minutes)
6. Boil your pasta in heavily salted water
7. Add the butter and grated Parmesan to your red wine sauce and mix over a medium heat
8. Add some salt and pepper to season and fresh basil (dried basil will do the job too – 2 tsp)
9. Your sauce should be reducing and becoming a bit thicker. If it’s too thick, just add a spoonful of pasta water to it
10. Add the pasta to the sauce and mix in
11. Serve with some fresh basil and Parmesan
