No-bake vegan cookies & cream

The supermarket special this week is innocentireland hazelnut dairy-free milk which I’ve used to put this vegan spin on my mam’s dessert. An ironic no-bake entry for a baking competition 🙃

You can make this cake in any size or shape and it’s basically impossible to make a mess of. You can also obviously make it completely not-vegan. I usually put a dash of baileys or whiskey in the milk for some flavour and it’s 👌

Method 👩‍🍳
1. Whip your cream to a very stiff consistency
2. Mix the hazelnut milk and alcohol in a bowl
3. Dip two cookies in the milk and sandwich together with a layer of cream
4. Continue to stack 6/7 cookies on top of eachother with cream in between and when tall enough, lay them down on their side on a plate
5. From this, continue to build out the lines and rows of your cake to the shape and size you want
6. Cover the top and sides of the cake shape in cream and crumble a cookie over the top
7. Place in the fridge for an hour or two. Then melt some dark chocolate and decorate as you want

I usually make this the night before and leave in the fridge so the cookies really soak up the flavour of the milk and cream and make a cake-like texture
