Nduja stuffed sausage rolls
Chorizo is out and nduja is in for 2021 let me tell you. It’s basically a spicier version of chorizo and a small bit goes a long way. It also releases a very red oil while cooking so don’t use too much or your pastry will be very wet and stained
Method:
1. Roll out your prebought pastry and divide in 3 widthways
2. Remove the sausage meat from its casings by squeezing it out in to a bowl
3. Mix in some pepper and sage if you want
4. Mix in a tbsp or so of nduja
5. Spread a layer of mustard in to the centre of each piece of pastry along where the sausage meat will sit
6. Take a handful of the sausage meat and roll it between your hands so it forms a long hotdog shape. Make 3.
7. Place these in the centre of each piece of pastry and fold the pastry over from right to left to make sure it closes
8. Press a fork along the edges to seal the top and bottom together
9. Brush the top with some egg yolk and slice them up in to smaller sausage rolls
10. Cook in a preheated oven at 180 for 20-25 minutes or as long as the pastry instructions say
