Mini Egg ice cream cookie sandwiches

Given the STUNNING weather out there you may as well incorporate a bit of ice cream in to the Easter bakes. These cookies are a one bowl job so very handy to make in an hour

Method 👩‍🍳
1. Preheat your oven to 180
2. Slice up the softened butter in to very small cubes
3. Mix all the ingredients together in a bowl and mould in to a ball of dough
4. Crush up half your mini eggs and mix them through the dough
5. With an ice cream scoop, place 3-4 cookies on lined a baking sheet spread out. Flatten the top down and push 2/3 whole mini eggs in to each cookie. Bake in the oven for 7-10 minutes and let rest for at least 30 minutes
6. Bake the cookies in batches, keeping the mixture in the fridge in between each batch
7. Crush up your remaining mini eggs, take two cookies and sandwich a scoop of ice cream in between them. Then roll the sandwich on its side in the crushed up mini eggs so they stick to the ice cream
