Easy Beef & Chorizo Taco Boats
The easiest way to get good flavour and texture in tacos is to layer a mix of cooked and raw ingredients which is why I’ve added fresh peppers, scallions and cucumber here
Method:
1. Fry your seasoned mince in a pan with the onion and garlic over medium heat until brown
2. Add the crushed peeled tomatoes from the can, chorizo and the fresh basil
3. Leave to simmer to the sauce reduced down – you don’t want it to be too wet or your tacos will be messy and soggy
4. Dice up the cucumber, yellow pepper, and scallions
5. Preheat the oven to 180 degrees
6. Fill each taco boat with the meat mix and sprinkle some cheese on top
7. Bake in the oven for 5-10 minutes or until the cheese has melted
8. Top with the fresh salad bits
